Belisario, founded in 1971, has built its reputation on Verdicchio wines. This Verdicchio di Matelica (D.O.C. 1967) finds its roots in the hilly, mineral-rich, limestone soil along the foothills Italy’s Apennines mountains in the Le Marche region. The inland location with a combination of warm days and cool nights gives a longer growing season, which in turn ensures a unique, refreshing white wine that is growing in popularity. Until recently, the best known Verdicchios from Le Marche were Verdicchio dei Castelli di Jesi, a zone closer to the Adriatic Sea where the wines can include up to 20% of Malvasia and Trebbiano.

This is a great food wine with a palate-cleansing level of acidity. It’s especially good with fish but the steely qualities are also a perfect foil for creamy risottos. For something simple, try the wine with my Chicken Salad with Fennel Spice.
